Deerling and Sawsbuck debuted in Pokémon Go as part of the Autumn event in October 2020.
The normal and grass-type Pokémon from Gen 5 are known for having a collection of different forms that you can collect, much like Burmy, Castform and Cherrim.

Which Deerling forms are currently available in Pokémon Go?
Exactly which Deerling form you can encounter in the wild was changed at the beginning of Pokémon Go's Season of Celebration - Tuesday, 1st December 2020 - to ensure that Deerling reflects which season you're currently experiencing.
Since the northern and southern hemisphere experience the seasons at a different time, this means that there are currently two different Deerling forms available in Pokémon Go. Though you'd have to do some significant travelling to capture both!
Trainers in the northern hemisphere can catch Winter Deerling, while those in the southern hemisphere may encounter Summer Deerling.
Deerling and Sawsbuck forms in Pokémon Go explained
Deerling and Sawsbuck are unique in the Pokémon universe as being the only Pokémon to have an appearance that changes along with the seasons. This means that both Pokémon have four unique forms - spring, summer, autumn and winter.
This design choice originates from how the games both Pokémon debuted in - Pokémon Black and White - had a seasonal mechanic; every month would cycle through a new season, allowing players to experience different weather conditions and catch different Pokémon.
The appearance of Deerling and Sawsbuck would alter along with this seasonal change both in the wild and within your party. This change, however, is purely cosmetic, with both Pokémon retaining their moveset and typing - normal and grass-type.
With the arrival of Gen 6, Deerling and Sawsbuck would become permanently stuck in their spring forms, as the seasonal mechanic was abandoned.
Thanks to Pokémon Go being tied to the real world seasons, we will, however, be able to catch all four forms for both Pokémon throughout the year.

How to get Spring, Summer, Autumn and Winter Deerling in Pokémon Go
Since Deerling's various forms are tied to the seasons, you must wait till that season occurs in Pokémon Go to catch it.
In the northern hemisphere, this means that you catch each Deerling form during the following times:
- Spring Deerling - March, April and May
- Summer Deerling - June, July and August
- Autumn Deerling - September, October and November
- Winter Deerling - December, January and February
Meanwhile, in the southern hemisphere, you can catch the various Deerling forms during the following months:
- Spring Deerling - September, October and November
- Summer Deerling - December, January and February
- Autumn Deerling - March, April and May
- Winter Deerling - June, July and August

How to evolve a Deerling into a Sawsbuck in Pokémon Go
Once you've caught a Deerling in Pokémon Go, your next goal is most likely going to be evolving it into a Sawsbuck.
It costs 50 Deerling candy to evolve any Deerling into a Sawsbuck.
You can collect this candy by walking with a Deerling as your Buddy, transferring any spare Deerling, catching more Deerling and using Pinap Berries when you do to increase the amount of catch candy you receive.
