There are 4 Power Moons to find until you reach the end-game, with one involving Peach and then some more.
1. Battle with the Lord of Lightning! (3 Moons)
To obtain this Multi Moon, you will need to defeat the giant dragon known as the Lord of Lightning. Use the Spark pylon to reach his tower, avoid his electrical rings, and the shockwaves. Pull the rings off his head then Ground Pound his head. Repeat three times to gain your prize.
2. In the Ancient Treasure Chest
From the Odyssey, approach the first flight of stairs. Look to the left of the stairs and you'll see a line in the bricks that can be used as a ledge to shimmy to the other side. In the chest you'll find a Moon.
3. Roulette Tower: Climbed
Use the P Switches to stop the moving blocks in the right positions to cross each 2D section. There's a red switch to Ground Pound if you get it wrong. Ascend to the top of the tower to claim this Moon for your own.

4. Roulette Tower: Stopped
Halfway through the tower, you'll encounter a section with some red and green Koopas patrolling. Jump up onto the far right set of ? Blocks, then jump on the Red Koopa on the top left platform. Send its shell flying to the left. It will then move around to the other side, destroying a brick wall.
5. Peach in the Ruined Kingdom
Head to the platform with the now sleeping Lord of Lightning. Talk to Peach to collect this Moon. This Moon can only be collected after the story is complete.
Other Ruined Kingdom Power Moons you can unlock
As well as the above Moons that appear when you clear a Kingdom for the first time, there is yet another set that you can collect later in the game. Be warned the following contains some light spoilers.
When exploring each Kingdom previously, you may have noticed a giant, grey block that seemingly has no purpose. It's this object you must find once you have completed the game that'll give you even more things to do.
The above video by Nintendo Life explains this in more detail, but in short - complete the game, find the block in any given Kingdom, and more Moons will be available for you to find.
